The dietician has taken ham and salami off my wife’s menu to address cholesterol. It should likely apply to me also, but I’m not organised enough to book things like “check ups” and dieticians. So I bought a large whole chook last weekend and we roasted it. It’s going into sandwiches this week (and will likely be a weekly thing for the foreseeable future) instead of ham/salami. So far, everyone likes the change. It works out far cheaper also: over 2kg of chook is about he prices of 500g of ham/salami.
Made myself a roast chicken sandwich.

Poached chicken breast is awesome to substitute for deli meat and you can add subtle flavours to it.
Alright consider this an order to GET organized. This is your health ffs. Nothing else is more important.
This is the second time today I’ve had to tell someone “yo you should REALLY see a doctor”.
A whole chook in the instant pot for 40 mins is easy peasy and you get left over stock. I do it for curries, chilli and apricot chicken.
The chook also wont have the nitrites found in ham and salami so there’s another health bonus.
So simple and yet so good
