If you want to have domains assigned to local IP addresses, you can also use Pihole as a local DNS! It’s a very nice tool for adblocking on network level anyways, can only recommend it.

Not answering every single point but generally: I’d set up proxmox, test everything, make notes, reach a state/config that you like, and then start over doing it “properly” from start.

No, but you’ll have much more overhead. I have a VM that hosts all Docker deployments which don’t need much disk space (most of them)
One thing I think about is making sure to get as much out of the sunlight as possible so you don’t have to turn on your lights so much. You can grow plants including herbs or even veggies on your window sills.
Some frames have small holes for drainage and air exchange so they can dry inside. I’ve also heard about some procedure where the inside gets waxed but I don’t remember if that was for bicycles or motorcycles

I’m always torn when it comes to recommending VPN privacy wise. I don’t know if handing all my traffic to a company rather than my ISP is really that much of a benefit. Personally I’m not using them.
