I know I’m a year late, but this is important to address: Chili is a bean dish. Meat is optional, beans are not.
Whoever told you that was very wrong. Chili was originally a meat and chili pepper dish. Adding beans is Tex Mex and came later.
If chili is a meat dish, why would there be a variant called “chili con carne”? If you don’t speak Spanish, that means “chili with meat”.
